Ingredients
1 lb penne pasta
1/2 cup finely grated Parmesan cheese more for garnish
2 tbsp extra virgin olive oil
4 cloves garlic minced
1 medium onion chopped finely
1.5 lbs ground beef
1 cup red wine or beef stock alternative
1 cup whole milk
28 ounces passata
2 tbsp concentrated tomato paste
1 tsp blend of dried Italian herbs
1 dried bay leaf
1 pinch granulated sugar
Kosher salt and freshly ground black pepper to taste
- Alternative Ingredients
Whole wheat pasta – replaces penne pasta
Nutritional yeast – replaces Parmesan for a vegan option
Ground turkey – replaces ground beef
Beef stock – replaces red wine
Almond milk – replaces whole milk
Directions
- Sauté Aromatics – Heat olive oil in a nonstick pan over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Incorporate minced garlic and sauté until fragrant, approximately 2 minutes.

- Brown the Meat – Increase heat to medium-high, add ground beef to the pan, breaking it apart. Brown the meat thoroughly before draining any excess grease.
- Simmering the Sauce – Pour in red wine or beef stock, letting it simmer and reduce by half, about 5 minutes. Stir in passata, tomato paste, Italian seasoning, bay leaf, sugar, salt, and pepper.
- Final Steps – Lower heat and allow the sauce to simmer gently for 20 minutes. Mix in whole milk and half of the Parmesan cheese. Continue cooking until the sauce thickens, around 25 minutes.
- Pasta Preparation – While the sauce simmers, bring a large pot of salted water to boil. Cook penne according to package instructions until al dente, then drain.
- Combining and Serving – Combine the pasta with the sauce, adjusting thickness with reserved pasta water if necessary. Serve hot, topped with additional grated Parmesan.
