Ingredients
- Fish
10 oz haddock fillet
2 tbsp light soy sauce
1/4 tsp salt
1/2 tsp sugar
2 tbsp hot water
15 g ginger, thinly sliced and julienned
4 scallions, cut into 2-inch lengths and julienned
Small bunch of cilantro, chopped
- Alternative Ingredients
Flounder sea bass, or cod can replace haddock.
For soy allergies substitute with coconut aminos or tamari.
Honey can substitute for sugar for a different kind of sweetness.
Directions
- Julienne the scallions and ginger. Chop the cilantro and set aside about 1/3 for garnishing later.
- Mix the light soy sauce, salt, sugar, and hot water in a small bowl. Ensure the sugar and salt are fully dissolved.
- Set up your steaming apparatus using a wok or a deep skillet. Place a rack inside and fill with 1-2 inches of water. Bring the water to a boil.
- Rinse the fish and place it on an oblong, heat-proof plate. Position the plate in the steamer and cover. Steam over medium heat for about 7-10 minutes depending on thickness. Use a dull knife to check doneness.
- While the fish steams, heat oil in a pan and fry the remaining ginger for 1 minute. Add white parts of the scallions and cook for 30 seconds before adding the rest of the scallions and cilantro. Pour in the soy sauce mix, bring to boil, and remove from heat after 30 seconds.
- After removing the fish, drain excess liquid, garnish with set-aside fresh aromatics, and pour the hot sauce over the top. Optionally, drizzle hot oil over the garnish for extra flavor.
