Directions

  • Preparation of Ingredients – Begin by cutting the bacon into small pieces and mincing the garlic.
  • Cooking Bacon – In a nonstick pan, cook the bacon with 1/2 cup of water until the water evaporates, about 8 minutes. Continue to cook until the bacon is crispy, then add the minced garlic and sauté briefly.
  • Mixing Sauce Components – In a separate bowl, whisk together the eggs, grated cheese, black pepper, and a tablespoon of the reserved bacon fat.
  • Boiling Pasta – Bring the water to a boil in a large pot, add salt, and cook the cavatappi until al dente, about 10 minutes.
  • Combining and Final Cooking – Drain the pasta while reserving one cup of pasta water. Quickly mix half of this reserved water with the egg mixture to temper it.
