Ingredients

  • 2 pounds bottom round, well trimmed and cut into 2-inch pieces

  • ½ cup all-purpose flour use cornstarch for gluten free option

  • cup olive oil

  • 1 cup onion, diced

  • 3-ounce can tomato paste

  • ½ cup dry red wine

  • Potatoes and Carrots
  • ½ pound potatoes, cut into 2-inch pieces

  • ¼ pound baby carrots

  • 1 cup beef broth use vegetable broth for vegetarian option

  • ½ cup frozen peas, thawed

  • For gluten sensitivity: Use cornstarch instead of all-purpose flour.

  • For a vegetarian version: Substitute beef with portobello mushrooms and use vegetable broth.

Directions

  • Coat & Sauté Beef – Dust the beef pieces with flour for browning and thickening the stew. Heat olive oil in the Instant Pot on sauté mode and brown the beef evenly (around 10 minutes). Then, remove beef and set aside.
  • Sauté Onions – In the same Instant Pot, cook diced onions until tender. Stir in tomato paste and blend well with onions.
  • Deglaze – Pour in the red wine and deglaze the pot by scraping off the flavorful bits stuck to the bottom.
  • Pressure Cook – Return the browned beef to the pot. Add potatoes, carrots, beef broth, kosher salt, dried thyme, and the bay leaf. Seal the lid and set the Instant Pot to high pressure for 25 minutes.
  • Release Pressure & Finish – After cooking, allow a natural pressure release for 10 minutes then quick release remaining pressure. Stir in the thawed peas right before serving to maintain their color and texture.
