  • 6 cloves Garlic, finely minced

  • 1/2 tsp Salt, or to taste

  • 1 tsp Black Pepper, freshly ground, or to taste

  • 1 bunch Spinach, finely chopped

  • 4 oz Parmesan Cheese, shaved

  • 2 tbsp Balsamic Vinegar (optional)

Directions

  • Boil the Pasta – Prep and Cook: Cook the fusilli according to package instructions. This usually takes about 10 minutes. Once done, drain and immediately rinse under cold water to stop further cooking and remove starch. Set aside in a large mixing bowl.
  • Toast the Almonds – Enhance the Flavor: In a skillet over low heat, toast the chopped almonds until they are light golden brown, about 5-8 minutes, stirring frequently to prevent them from burning. This helps release their oils and enhance their flavor.
  • Infuse the Oil – Develop the Aroma: In the same skillet, lower the heat and add the olive oil and minced garlic. Gently heat for about 5 minutes, or until the garlic is fragrant and pale golden, not browned, to develop a deep, rich aroma.
  • Combine and Toss – Integrate Flavors: Add the garlic-infused olive oil and the toasted almonds to the fusilli and toss well to ensure all elements are well-coated and integrated.
  • Add Spinach – Add Freshness: Toss the chopped spinach into the pasta mixture. The residual heat will slightly wilt the spinach, releasing its flavors.
