Ingredients
- Ingredients
1 pound red-skinned or new potatoes, cut into 1-inch pieces
5 ounces fresh green beans, cut into 1-inch pieces
1/4 cup chopped sweet or red onion
1/4 cup thinly sliced celery
3/8 cup mayonnaise
1 tablespoon dill relish
1 tablespoon lemon juice
1 tablespoon sour cream
1 teaspoon chopped fresh dill
Freshly ground black pepper, to taste
Salt, to taste
- Alternative Ingredients
Radishes or cucumbers instead of onions for a different crunch.
Chopped hard-boiled eggs can be added for extra protein replacing some of the potatoes.
Directions
- Step 1: Boiling Potatoes – Place the potato pieces in a pot, cover them with water, and season with a pinch of salt. Bring to a boil and simmer covered for approximately 15 minutes, or until the potatoes are tender. Drain and let them cool for 10 minutes.
- Step 2: Steaming Green Beans – Arrange the green beans in a steamer basket over simmering water, ensuring they are not overcrowded. Cover and let steam for 5 minutes until bright green and slightly tender yet retaining a crisp bite. Remove and rinse under cold water to halt cooking.
- Step 3: Vegetable Assembly – In a spacious mixing bowl, combine the cooled potatoes, blanched green beans, chopped onions, and celery slices, forming a base for the salad.
- Step 4: Crafting Dressing – In a smaller bowl, whisk together mayonnaise, dill relish, lemon juice, and sour cream until smooth. Stir in chopped dill, and season with black pepper and salt to create a balanced, flavorful dressing.
- Step 5: Mixing and Seasoning – Drizzle the dressing over the assembled vegetables, gently folding to ensure each piece is evenly coated. Taste and tweak the seasoning if necessary, perhaps adding more pepper or a sprinkle of salt. Optionally, let sit for an hour in the refrigerator to deepen flavors.
