3 1/2 pounds trimmed and cubed pork shoulder
Sea salt to taste

2 anchovy fillets in oil
1/4 cup concentrated tomato paste
One 28-ounce can whole peeled tomatoes
1/3 cup mixed Castelvetrano and Kalamata olives, sliced
1/4 cup freshly chopped basil leaves, plus extra for garnish
2 tablespoons red wine vinegar
1 tablespoon rinsed capers
1/2 teaspoon red pepper flakes
1/2 teaspoon white sugar
Cooked polenta and freshly shaved Parmesan cheese for serving
- Alternative Ingredients
Pork shoulder can be substituted with chicken thighs for a lighter version.
Olive oil can be replaced with avocado oil.

Directions
- Seasoning Preparation – Generously season the pork with sea salt and freshly cracked black pepper.
