  • 1.5 cloves garlic minced

  • 0.5 medium ripe tomato diced

  • 0.5 tsp garlic powder

  • 0.5 tsp cumin

  • 0.125 tsp oregano

  • 0.25 tsp sazon or homemade blend/paprika

  • 0.25 tsp kosher salt adjust to taste

Directions

  • Preparation – Start by adding all ingredients into the Instant Pot. This includes the lentils, trimmed chicken thighs, water, bouillon, chopped onion, scallion, cilantro, minced garlic, diced tomato, and seasonings (garlic powder, cumin, oregano, sazon, salt). This mixes the flavors before cooking and takes about 5 minutes.
  • Pressure Cooking – Seal the Instant Pot and select the ‘Soup’ setting. Cook on high pressure for 30 minutes. The high pressure helps to tenderize the chicken and meld the flavors for a rich broth.
  • Natural Release – Let the pressure release naturally for 5 minutes after the cooking time ends. This prevents the lentils from turning mushy and retains the structure of the ingredients.
  • Shredding and Seasoning – Open the lid carefully, and use a fork to shred the chicken into bite-sized pieces within the stew. Stir well and taste. Adjust the seasoning with additional salt if needed. This step should take about 5 minutes, ensuring flavors are well balanced.
