Ingredients

  • Dairy Base
  • 8 cups fresh whole milk

  • 1/4 cup plain whole-milk Greek yogurt

  • Alternative Ingredients
  • Lactose-free milk replaces whole milk for lactose intolerance

  • Non-dairy yogurt cultures replaces Greek yogurt for vegan option

Directions

  • Initiate Boiling Process – Place the milk into your Instant Pot and secure the lid. Activate the Yogurt setting to start the boiling phase, which should last approximately 35 minutes.
  • Temperature Check and Cooling – Once boiling is complete, use the quick release method as per the Instant Pot’s manual. Ensure the milk reaches at least 180°F; if not, repeat the boiling process. Once achieved, cool the milk rapidly to between 110°F and 115°F using an ice bath, which should take about 5 minutes.
  • Incorporate Yogurt Culture – In a separate bowl, mix the Greek yogurt with about a cup of the cooled milk until well combined. Introduce this mixture back into the Instant Pot, stirring thoroughly to distribute the yogurt culture evenly.
  • Fermentation – Set the Instant Pot to the normal Yogurt setting and let it ferment for 8 to 12 hours; opting for the longer duration will yield a thicker yogurt.
  • Chilling – After fermentation, transfer the yogurt into clean containers and refrigerate for at least 4 hours to set properly before serving.
