Creamy Parmesan Grits

Directions

• Starting the Base – In a medium heavy-bottomed saucepan over high heat, bring water to a rolling boil. Stir in the kosher salt and baking soda.
• Adding Grits – Gradually whisk in the grits to avoid lumps. Keep stirring until the mixture begins to thicken, approximately 2 to 3 minutes.
• Simmering Process – Turn down the heat to low and let simmer, stirring occasionally to prevent sticking, until the grits are creamy and smooth, about 45 minutes. If the mixture becomes too thick, thin it out with up to 1/2 cup additional water.
• Finishing Touches – Remove from heat and blend in the butter and grated Parmesan until well incorporated. Season with freshly ground black pepper and adjust salt as needed.
